The Standard

I have spent a lot of my life traveling to exotic places, delving into local flavors and exploring the culinary delights which these destinations have to offer. One of our favorite places is Mexico, specifically, the Riviera Maya, where fresh seafood in its many incarnations is served daily beginning with breakfast and not ending until you’re stumbling home way past dark…..well, at least on a good night.

It would be redundant to say that Southern California is one of the best places in the world to experience really amazing Mexican food.  While it was at one time a part of Mexico itself, the borders that once divided us are gone and the foods that unite us remain.  (What does that even mean?!?!)

It means that we love Mexican food, and The Restaurant at The Standard, Hollywood is bringing you one of our favorite dishes this side of The Alamo…Seafood Ceviche.

Known for it’s use of a variety of fresh seafood, ceviche is not cooked with heat, but rather, with citrus juices which slowly marinate the seafood and lock in the natural flavors of the fish.  Tossed with salt, pepper, onions and the occasional chili powder, ceviche is an incredible meal in itself.  Especially when you’re seaside on the beaches of Tulum, Mexico.
