Branzino, Braised Fennel & Potatoes
When God created the Garden of Eden millennia ago, I’m pretty sure he never thought that it would resurface in modern times at Chateau Marmont on Sunset Boulevard. But that’s exactly what happened. Well, at least in my opinion, but I’m biased because the Chateau is like my older sister who never let me borrow her stuff….until now.
Whenever I’m out in LA to visit The Standards, I always make it a point to visit Chef Carolynn Spence in the restaurant at Chateau Marmont. Having honed her skills at The Spotted Pig in New York City as the Chef de Cuisine, she has now created an incredibly hearty menu with European influences consisting of fresh local produce and simple shared plates.
To start, the Burrata & Tapenade is a classic while Black Truffle Arancini & Wild Mushrooms offer a sophisticated flair. Fresh crab cakes on a bed of smashed avocados always are my favorite, followed immediately by Chef Spence’s Ceasar Salad made with one long heart of romaine. A salad really couldn’t get any more chic.
After your fair share of charcuterie and Domaine Ott, nothing serves the palate better than the Thyme Roasted Chicken with Potato Purée and Swiss Chard. When you’re in Los Angeles, you must do as the Angelenos and cut out all carbs while indulging in the Roasted Salmon served on a bed of warm lentils. If you were to ask me, my favorite dish is the Brazino with Braised Fennel & Potatoes (pictured above, if only to entice).
For those of you looking for a more casual dining experience, Chef Spence’s reach does not end at the Chateau. Just a truffle’s throw down the street is the Bar Marmont where a menu of small plates, shared plates and spectacular entrées await.
